Roasted Green

24 grams of loose leaf Camellia sinensis, grown, handpicked, and processed right here on our farm in Salem, OR.

Taking our hand picked 2023 spring flush green tea, we painstakingly roasted the leaves over the course of several months to produce something completely different. The light and delicate sweetness of the green tea transforms into something nutty, rich, full-bodied, and deeply fragrant. When fresh, the roasted character can be almost overwhelming. After a period of rest, however, we’ve found this fiery quality to smooth and mellow out, integrating well with the original flavors and resulting something in between houjicha and roasted Taiwanese oolong. Tea with this level of roast has a lower moisture content, and is better suited to longer periods of storage and aging than standard green tea. It can be brewed well in any number of ways, and is better able to withstand higher temperatures. We generally prefer to prepare it with water around 195F in a glass or porcelain vessel. It’s also quite good cold brewed.
