24 grams of loose leaf Camellia sinensis, grown, handpicked, and processed right here on our farm in Salem, OR. This is the first tea we produce each year, and is the purest distillation of our fresh spring growth. It is extremely fragrant and has gentle but lasting flavor. We have two distinct greens on offer from our 2024 season.

2024 1st Pick: This tea was produced from our first harvest pass through our two production tea plots. It is marked by by a mild, clean sweetness following a light astringency. It is more sensitive to water temperature than the Spring Green. We’ve found our preference to be brewing it in 160-170F water to experience the best flavor and texture of the liquor. The flavor starts off slightly vegetal, and transitions to something akin to tart kiwi and white grape jelly. This tea is also available in our 2024 Spring Variety Pack.

2024 Spring Green: Our second production green tea of 2024 is a blend of several days of green tea harvest over the course of one and a half weeks. The flavor is bolder than that of the 1st Pick green, with less astringency and more full-bodied juiciness. A strong savory undercurrent comes out in longer steep times. This tea holds up better under a range of water temperatures, so you might consider experimenting with it a bit. In our taste tests, we found notes of lemon icing and candied citrus rind, maybe a bit of ripe persimmon, and a long lingering sweet finish.
